INSALATA TEATRO (THEATRE SALAD)
200g Feta cheese
Extra-virgin olive oil
Salt and pepper to taste
Wash and peel the carrots and courgettes. Finely cut them lengthwise using a mandolin slicer and put them to one side. To serve, prepare a bed of rocket, add some carrots and courgettes to create a decorative, scenic design and then sprinkle with feta cheese. Season with a vinaigrette sauce using balsamic vinegar which you can obtain as follows: dissolve a pinch of salt in a tablespoon of balsamic vinegar, add a tablespoon of lemon juice, a tablespoon of Extra-virgin olive oil and pepper. Whisk the ingredients until an emulsified, homogeneous mixture has been achieved.
