SAN DANIELE HAM SALAD

150g of mesclun deluxe salad mix
4 figs
150g of raw San Daniele ham
2 mozzarellas
Extra-virgin olive oil
Salt and pepper to taste
Acacia honey
Preparation
Put the salad mix, the figs, the mozzarellas and the ham onto a dinner plate or a chopping board.
Drizzle with Extra-virgin olive oil and season with salt and pepper to taste. For a delicate variant, serve it with a little Acacia honey.
INSALATA TEATRO (THEATRE SALAD)

150g rocket
2 courgettes
2 carrots
200g Feta cheese
1 lemon
Balsamic vinegar
Extra-virgin olive oil

Preparation
Wash and peel the carrots and courgettes. Finely cut them lengthwise using a mandolin slicer and put them to one side. To serve, prepare a bed of rocket, add some carrots and courgettes to create a decorative, scenic design and then sprinkle with feta cheese. 100g bilberries
200g feta cheese
1 yellow peach
½ lemon
A pot of yoghurt
Chives
Extra-virgin olive oil
Salt and pepper to taste
Preparation
Mix all the ingredients together in a bowl and start preparing the yoghurt sauce. Mix the content of a pot of yoghurt with the juice of half a lemon, Extra-virgin olive oil so that the oil does not remain on the surface, then add the minced chives.
